In-house control
Entrepreneurs in the food branch must have sufficient and accurate knowledge on the foodstuffs they produce, refine and distribute. Entrepreneurs must draw up an in-house control plan (also known as an own-check plan) including an in-house control support system and, if necessary, HACCP system. Instructions for drawing up the plan can be found on the Finnish Food Authority (Ruokavirasto) website.
The in-house control plan is checked at the beginning stages of the activity. The in-house control-related bookkeeping and other records must be kept in a way that allows them to be inspected by food control officials. The in-house control plan must be updated when necessary.
